Located in central Guatemala, Cahabon is  a transversal strip of land, mountainous in the  west and low laying in the east into the Gulf of Mexico

The beans are transported to a central co-op by farmers where they are fermented in wooden boxes.  Drying is a two stage process, first via indirect sun in a solar drying and wooden tables finished in direct sun on cement patio.
